Im gonna just think and type here so if I ramble and jump from topic to topic forgive me. Its all about bbq anyway. :)
Yeah, so I want to make videos on every bbq I make so I can share my learning experiences so far. I bought a "legit" smoker about a month ago meaning it has thick walls and can retain its heat well. I have a couple of bullet water smokers that can do the job, but this big one is real nice and it doenst take a lot of fire babysitting. THis last month I have made 1 brisket, 2 pork butts, 1 shouder, 1 sparerib, and a whole mess of chicken quarters. Out of all the chicken is the hardest to make.
Today I am going to kick some ass on a brisket so get ready!
So far i have trimmed and seasoned the brisket Its sittin in the fridge waiting for a good smokin'. I'm gonna run out and buy some Pecan wood. I still haven't figured out which one is my favorite yet.. Seems like its popular to smoke with Hickory first, then oak, then Pecan or Mesquite. Last time I smoked with Hickory my chicken came out kind of tannic. It was strong dirty smoke flavor. It may have been my fault, so I will give it another shot. I like regular oak wood. It seems like it burns slow and steady just like a BBQ fire should. Mesquite has some awesome sweet strong flavor but you gotta be careful because the same thing happens when you oversmoke. I think a mix of Oak and a little mesquite is a good combo.
After watching a few shows yesterday I learned Franklins Barbecue in Austin uses Post Oak. They have lines running out the door and down the street so people must like it. That guy Franklin knows his stuff he is real confident when talking about the technicalities of bbq.
Lately I have been watching tons of videos on bbq I want to share them with you because some are very informative and others are good for a good chuckle. I will get to that later.
The first two seasons of BBQ Pitmasters were pretty good. Season 1 format is way better than 2 and I think they are getting back to that format this season and last.
Man I can go on and on about BBQ.

I Love Barbecue
Oh yeah, I almost forgot. I graduated from Culinary School. I worked as chef, So I enjoy cooking and cooking topics. Bar-b-q's are the best. Texas Bar - B-Q! I love BBQ. Briskets, Ribs, Chicken, all of that good stuff. I want to share my experiences with you.
Heres my first blog. I am a student at the Art Institute of Pittsburgh Online and I am taking an accounting class. Its a killer for me. Not too much math involved, but a lot of math-like talk and accounting terms that a normal non-accounting person might not be too familiar with. Its getting down to the nitty gritty and I gotta go study.
I'll probably be talking about school stuff and sports like football, baseball, baseball....pretty much American sports. What about Soccer you ask? Well Soccer is for pencilnecks that couldn't make it in American Football or Baseball. I have had some experience with the local YMCA Soccer organization and well lets just say it was....wierd.
